Umami Bock is a beer saturated with umami. The rich, deep taste arises after long aging with beer yeast and a special umami yeast. Bladder seaweed from Læsø and decoction enrich the beer with even more body and character and give it aromas of honey, baked goods, grain and caramel.
Developed by Ørbæk Brewery, brewmaster Andreas Falkenberg, in collaboration with beer writer Christian Andersen.
A strong pilsner type beer with a little extra love in the brewing process and in the choice of ingredients. 5 different malts are used, each of which gives unique characters to the beer, such as caramel, honey, pastry, grain, crispness, sweetness and fullness. A sweetness and fullness that is boosted using the traditional brewery method of decoction mashing, where additional caramelization is created in the kettles during brewing.
Appearance: Beautiful golden color with a light veil. Beautiful white and durable foam
Aroma: Fine caramelized sweet aroma of caramel and grain with notes of pear, orange, spice and citrus fruits from the hops. There is a depth and salty note from the umami donors and the addition of seaweed
Taste: Powerful, rich and deep umami when tasting this beer.
Mouthfeel: Warming and full
Overall: A sweet and fresh bock that has gained great depth and character in the form of good umami notes that are clearly felt in the taste. A perfect companion for food where you think Soya sauce, Fish sauce, Worcestershire sauce or anchovies go well.
Best enjoyed with: Food that you would normally add umami to from the following umami-rich ingredients: Soy sauce, Fish sauce, Worcestershire sauce, Miso paste, Tamari, Anchovies or anchovy paste, Parmesan, sun-dried tomatoes or tomato paste, Mushrooms, Beef or chicken broth, seaweed, sesame oil. A bock is generally best for: Sushi, chicken, salads, smoked fish and sausages, bratwurst, Mexican and spicy food.
